A family freezer, then a storefront
Wichos started the way most paleterias in the Valley start: one family, one recipe and a lot of fruit.
Real fruit, no shortcuts
Every fruit paleta starts as whole fruit on the cutting board that morning. No concentrate, no powder mixes, no artificial color to make the mango look brighter than mango looks.
That is what the sign means when it says 100% fruta natural. It costs more and it takes longer. It is also the reason people drive across town instead of buying a box at the store.
